Contexto El *agraz o verjus (en realidad lo de verjus es un galicismo que viene de “jus vert”, zumo verde, y en los recetarios antiguos se habla siempre de verjús, berjús..., aunque la palabra reconocida por la RAE es \\\\\\\"*agraz\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\\"), es una especie de mosto de uva verde que se usaba para condimentar muchos platos hasta que el uso del limón lo desplazó en el siglo XVIII. *Manna is a unique wine that Franz has dedicated to Maria Luisa; first released in 1995, it is a cuvée of Riesling and Chardonnay, a part of Gewürztraminer and a small percentage of Sauvignon Blanc; starting with the vintage of 2013, Kerner has been added by decreasing the percentages of Riesling and Gewürztraminer. Because it shares the same acid base as wine, *verjuice will not distort the essence of wine, the way vinegar or lemon juice would and thus it is the perfect alternative condiment to use when quality wines are being served with a meal. Pour les vignerons, la *manne est la grappe de raisin en formation.
