Los procedimientos de *termovinificación también son útiles cuando las uvas tienen niveles escasos de pigmentos o están afectadas por hongos, pues el calor inhible la acción de las enzimas oxidasas (ej. lacasa) además de tener un efecto antiséptico. 

*Thermovinification procedures are also useful when the grapes have low levels of pigments or are affected by fungi, as heat inhibits the action of the oxidase enzymes (e.g. laccase) in additin to exerting a sanitising effect. De nos jours, la vinification chauffée est encore pratiquée et se nomme la *«thermovinification» .
