Contexto

Cuando la presión creada de forma endógena es superior a 1,5 e inferior a 4 atmósferas, el vino se denomina de *aguja.

It may be a sought-after feature, which lead to the wine being classified as either perlant or *pétillant (e.g. those made or aged "on lees"), or not; in which case it usuallay occurs in recently fermented wines. La saveur carbonique dans un vin dépend d'ailleurs beacoup de la température: telle dose de gaz convient à un vin bu frais et rend un vin chambré à 18ºC presque *pétillant.

Definición Característica de algunos vinos cuyos contenidos en carbónico son perceptibles en boca, sin llegar a ser espumosos (no hay formación de espuma, ni segunda fermentación en botella). A characteristic of some wines whose contents in carbon dioxide are detectable on the palate but cannot be cosnidered as sparkling (there is neither formaion of foam, nor seconde fermentation in bottle). Se dit d'un vin légèrement mousseux, dégageant des bulles de gaz carbonique d'une surpression de 1 à 2,5 bars à 20ºC.
